Sharon Knox’s spicy buffalo chicken dip just right for entertaining

Peninsula resident Sharon Knox enjoys entertaining by the lake, where she and husband Gary Knox, the former mayor of Cornelius, have lived for 15 years. The couple enjoys being out on their dock and watching the sunset.

The former mayor, a well-known real estate broker with cousin Charles Knox, is often seen rowing and fishing in their cove between Spinnaker’s Reach Drive and Peninsula Shores Drive.

For hobbies, Sharon enjoys traveling, needlepoint, painting, “but most of all being with our dear friends around the lake.”

She grew up in Greensboro and still consults with her mom on recipes and special dishes. “My mom taught me to cook and I still call her for advice,” Sharon says.

They have three daughters, Tabitha, of Concord who has three daughters of her own; Olivia, a rising junior at USC; and Tiffany, a rising senior at Cannon School. Phoebe, a “sweet maltipoo,” rounds out this extremely busy family.

Sharon loves to kid around and chat with friends and new acquaintances. “I love to entertain by going to people’s houses!” Friends arrive by boat or car and there’s always plenty of good conversation.

“I’m not a big fan of too much planning. I love it when people drop by, and this recipe is always great,” she says.


Buffalo chicken dip

Ingredients 

  • 1 large can white chicken drained
  • 1 block regular cream cheese softened
  • 1 cup shredded cheddar cheese or split it with mozzarella – either way
  • 1/3 cup Frank’s Original RedHot pepper sauce (not the wing sauce)

Preparation

  • Adjust for more of a kick or little less
  • Mix altogether and put in a glass pie dish and bake at 350 degrees for 30 minutes or till bubbly
  • Serve with multi grain wheat thins
