Flying Biscuit Café, a popular Southeastern breakfast spot that first opened in Charlotte in 2010, is coming to the Cornelius-Huntersville-Davidson area.

A press release states that site selection is underway, with the address and opening date to be announced once a lease is signed.

The owners, brothers David and Jimmy Mumby, have been longtime customers of The Flying Biscuit Café at Park Road Shopping Center in Charlotte. Jimmy Mumby is a graduate of Davidson College. Both brothers reside in the Mountain Island Lake area.

“We chose Flying Biscuit because we believe it’s the best in its class, and we’ve always loved the food, personality, and welcoming atmosphere of the brand,” they said. “We’re excited to combine our love of breakfast and brunch with our professional experience to bring a place to Huntersville and the greater Lake Norman community where people can enjoy great food and drinks, gather with family and friends, and feel at home.”

Their mother, Denise, will be involved in day-to-day operations. She has more than 20 years of experience in food and hospitality, including 12 years managing a fast-food breakfast concept.

The Lake Norman location will serve breakfast and brunch until closing at 3 p.m. There will be no dinner service.

Among the menu offerings are the signature Creamy Dreamy white cheddar grits, biscuits with cranberry apple butter, chicken and waffles, shrimp and grits, stuffed French toast, chicken-and-sausage dishes, omelets, scrambles and Benedicts.

The menu also includes items such as Chorizo Hash, Pancake Tacos, Hangover Hash and the Freebird Benedict, which combines a split biscuit, buttermilk chicken tenders, chicken sausage gravy and a poached egg. Lunch and brunch options include Nashville Hot Chicken and Firecracker Shrimp wraps, burgers and salads.
