Feb. 17 The Peninsula Community Foundation has made three grants totaling $20,000 to The Ada Jenkins Center, Discovery Place Kids Huntersville and the YMCA Starfish Program. The foundation also elected new officers: Todd Wiebusch, president; Jean Bock, vice president; Gip Bonar, treasurer; and Andrea Griffin, secretary. New board members include Laura Engel and Wendy Hershey. |

Feb. 16 Cornelius Police are looking for a red compact car that was seen leaving the Cornelius Village Apartments on Meridian Street early this morning. At 2:49 am Thursday police responded to reports of multiple gun shots. Witnesses saw a small red car leaving the scene. Detectives discovered four occupied apartments were struck by stray bullets, but no one was injured. Officers have increased patrol around the apartments which are at 19317 Meridian. Cornelius Police are asking anyone with information to contact the North Meck Crime Stoppers at 704-896-7867. You can remain anonymous. |

A favorite recipe for the
perfect party mix starts here |

| Fox used to belong to The Peninsula’s Dinner Club. She has several favorite recipes |
Joyce Fox loves to cook, but like many busy career women doesn’t always have the time.
“Before I started selling real estate, I cooked, baked, and made chocolates and hard candy,” she says. “Since real estate became my life, I don’t have an opportunity to cook or entertain very often.
Her first career was in mortgage banking. She was a branch manager and then a training manager for a large mortgage company, helping to open branches up and down the East Coast and training the staff.
Fox got her real estate license in 1981 and has been in the business since then. She currently is a Keller Williams luxury specialist.
Fox moved to The Peninsula 11 years ago and is in her second home in The Peninsula, on Hidden Cove Lane.
Fox is sharing her party mix recipe.
“The party mix recipe I make every year and give to family as gifts,” she says. “Everyone loves it but they say theirs never turns out as good as mine.”
She’s been making it for 45 years.
Why is this a favorite recipe: “Friends say it is the best that they have eaten. I think it is because I always put extra nuts.”
Any special instructions: The secret is stirring the oil mixture as you pour it over the cereal mixture, and stirring every 15 minutes as it bakes.
Party Mix
Ingredients
1 pound mixed nuts, salted
1 pound cashews, salted
1 pound peanuts, salted
1 10 1/2 ounce package Cheerios
1 small box Rice Chex
1small box Corn Chex
1 box Veri-thin pretzels
1 box pretzel twists
1 4 12 ounce pack pretzel bits
Directions
Mix all dry ingredients in a large roasting pan.
Make an oil mixer of 2 cups salad oil, 1 Tablespoons Worcestershire sauce, 1 Tablespoon garlic salt, 1 Tablespoon season salt.
Stir together.
Pour oil mixture, stirring as you pour, over dry ingredients.
Bake in very slow oven, 250 degrees, for 2 hours, stirring and turning mixture with wood spoon every 15 minutes. Be careful not to crush cereals. |

MARCH 3-4 GYMNASTICS The "Everest Classic," a two-day girls gymnastic competition, is March 3-4 at Hough High School. Put on by Visit Lake Norman, Everest Gymnastics Training Center and Cornelius PARC, the event is expected to bring hundreds of young gymnasts from across the country. In honor of Black History Month, the Cornelius PARC Department is hosting "Celebrate Smithville" at Town Hall from 1-4 pm Saturday Feb. 25. Smithville is one the oldest communities in Cornelius, dating back to the 1880s. It will feature singing and dancing performances by local groups, children’s activities, community memorabilia and pictures, art by local artist James Donaldson and light refreshments. The event is free and open to the public. The Smithville CommUNITY Coalition is partnering with the PARC Department. The coalition was formed last year and is made up of residents, non-profits and faith-based communities. Their vision is to revitalize and transform their community into a vibrant, safe and attractive place to live and work that builds pride in its residents and attracts new developments of affordable homes and businesses, focusing on empowering all individuals and strengthening families. |

The Lake Norman Lucky Cats program is a 501(c)3 non-profit that was started out of necessity. Back in the 1990s Lucky Cats founder Abigail Jennings became aware of a colony of 19 feral cats in the woods behind the then-new Lake Norman Realty building on West Catawba Avenue. |
